FOOD & BEVERAGE MANAGER

 

Main purpose:

The F&B Manager will be in charge of the re-opening of the renovated Restaurant and Bar of the Hotel Savoy, after the huge effort made by the Company in reshaping both the outlets. He/she needs to maintain and consolidate the well-known exceptional service of the F&B Division for our Guests in compliance with Rocco Forte quality standards and procedures. 

Reports to: General Manager.

 

Main duties & responsibilities:

·        Manages the Restaurant, Bar and In Room Dining departments, according the to the Company policies, standard and procedures, maintaining its high reputation;

·        Leads by example utilizing a “hands-on” approach to management and assists developing highly motivated, pro-active F&B Team Members with the highest ethical standards in order to deliver a quality oriented service;

·        Develops an operating budget and monthly forecast for the department; he/she monitors and takes corrective action as necessary to help assuring that budgeted sales, cost goals and payroll costs are attained;

·        Deep knowledge of the local area, in order to develop, in collaboration with the PR Manager, attractive events and promote the venue through original and targeted initiatives, collaborating with local businesses and showcasing the local culinary and cultural highlights;

·        Works together with the Events Manager in organizing events;

·        Ensures that adequate cash procedures are followed and that documentation is reported in an    accurate and timely manner, as well Guest check analysis, ticket controls, and daily sales reports and analysis;

·        Responsible for recruiting, training and evaluating F&B Team Members;

·        Assures that effective orientation and training for new staff and professional development activities for experienced staff are planned and implemented, in partnership with the L&D Manager;

·        Ensures that all the procedures regarding Health & Safety and HACCP are followed;

·        Creates and maintains personalized Guest relations, handling complaints when necessary;

·        Oversees the overall F&B service on a regular basis, ensuring quality standards.

Other requirements:

·        Professional experience, preferably at an international level, in the same role for at least four years;

·        Italian and English knowledge at Advanced level. Third language preferred;

·        Excellent knowledge of the local area;

·        Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting and, In Room Dining;

·        Experience in quality driven projects;

·        Experience in change Management;

·        Proven experience in organizing events and promoting activities;

·        Familiarity with F&B Management systems such as Simphony.
